2023 Sauvignon Blanc + Grilled Halibut with Beurre Blanc

Our white Bourdeaux-style Sauvignon Blanc and Semillon blend is from Angiolina Vineyard in the Rattlesnake Hills, a Sustainable WA-certified vineyard. The Sauvignon Blanc was fermented in stainless steel and contributes subtle aromas of lemon curd, pear, and fig. The Semillon, which spent some time in a neutral oak barrel after fermentation, contributed to the wine’s rich and creamy texture. Medium acidity balances the blend and makes it an exceptional wine to pair with food.

Suggested wine pairing: We hit the kitchen to find a perfect pairing for this springtime stunner. We broiled some fresh halibut and sauteed broccolini in shallot and olive oil, then drizzled the dish with Beurre Blanc, the classic French lemon butter sauce. The lemony and tangy flavors of the sauce matched beautifully with citrus in the wine, and its buttery texture softened the wine’s acidity, bringing out its creamy texture.
