What’s happening in the winery?

Our wines are progressing nicely in the cellar. The 2024 vintage is still young, but we're happy with their development.

Our whites are vibrant and lively, and their fermentations are complete. We're now finishing them for bottling, which involves racking off the lees, blending trials, stabilization, and filtration. We expect to release these in spring 2025.

Our red wines, on the other hand, have just begun their maturation journey. In January, all the barrels finished primary and secondary fermentation and are aging in our 55-degree cellar. This period, known as "élevage" in French, translates to "raising" or "bringing up," an apt description of how red wines evolve from their raw and angular “teenage” phase to a refined and harmonious “adult.” These wines are still young and don't resemble the finished wines you expect to enjoy. But with time and patience, they will evolve into something truly special.

We're excited to see how these wines continue to evolve over the coming months and years.
