December Cellar Update

Blending is where the magic happens!

We have a lot going on in the cellar right now! Most of our red wines have finished their primary fermentation and are going through malolactic fermentation, which softens the acidity and boosts the complexity of the wine. Soon, we’ll transfer the barrels to our cold room, where they will start their long but rewarding journey toward maturity.

We have also begun blending trials for our Spring Release wines. Blending is one of the most magical parts of winemaking. It’s where we put our artistic, sensory, and scientific hats on to create the best wine possible.

One of the wines we’re working on is our Sauvignon Blanc, possibly blended with Semillon. Our Sauvignon Blanc is bright and crisp, with citrus, green apple, and herb notes. The Semillon is rounder and fruitier with a bit of honey and peach on the palate. We’re looking to make a wine that is complex and balanced, with a refreshing acidity and a long, lingering finish. We’ll dial in the exact blend and proportions over the next few weeks, but we’re excited to see what we can create. We can't wait to release this wine, along with others including a new red, in spring 2024!
